I love to make this on New Years Day and on cold winter nights.
Ingredients
  • ½ bag of 16 bean soup mix, rinsed
  • 1 box of Swanson Vegetable Broth
  • ½ can of tomato paste
  • 1 can, undrained, chopped tomatoes
  • 1 large can of collard greens (with juice - I prefer Glory brand)
  • chopped onion, celery, carrots and bell (or poblano) peppers
  • garlic powder, salt & pepper to taste
  • Pasta Sprinkle (or your favorite Italian Seasoning)
Instructions
  1. Combine all ingredients in your crock pot. Cook on high for 10 hours. If you don't have that much time, pre-soak the bean mix.
  2. Serve with fresh cornbread. I like to make small muffins & sprinkle the tops with a little Slap Ya' Mama Cajun seasoning before baking.

We tasted this slaw at Kroger and loved it. It's even better with the addition of onion. We made it the first time for Emily & Matt's 2015 Summer Kick-Off Cookout.
Ingredients
  • 1 pkg. cole slaw mix (16 oz.)
  • ½ tsp. seasoned salt
  • ½ cup Honey Mustard dressing
  • 3 Tbsp. Sriracha pepper sauce (or to taste)
  • ¼ cup red onion, finely chopped
  • ¼ cup green onion tops or chives, sliced
  • freshly ground black pepper to taste
Instructions
  1. Combine all ingredients, refrigerate, and enjoy.
Notes
I want to try this recipe, substituting broccoli slaw mix, Trader Joes's cruciferous mix, or perhaps mixing several kinds of cruciferous vegetables.

*a note from Emily* It keeps getting better with age (like pickles!), and won't spoil since there's no mayo.

I am IN LOVE with the slaw at Zoe's Kitchen. I finally figured out how to copycat it so I can make it at home. It's SUPER simple!

  • SLAW: green onions, diced
  • SLAW: 1 container of feta crumbles
  • SLAW: *optional* julienned fresh jalapenos

  • DRESSING: the juice of one lemon
  • DRESSING: 6 garlic cloves, minced
  • DRESSING: greek seasoning
  • DRESSING: coarse ground black pepper
  • DRESSING: a pinch of salt
Instructions
  1. Combine all dressing ingredients in a mason jar and shake until blended. Pour dressing over slaw ingredients in a large tupperware bowl. Shake the dickens out of the bowl until all slaw is thoroughly coated.
Tip: Peeling a Head of Garlic FAST

How to Peel a Head of Garlic in Less Than 10 Seconds from SAVEUR.com on Vimeo.

I had to peel 20 bulbs of garlic for my Christmas cooking this year. I looked up hacks online and tried this one. IT WORKS!!!! Here’s a few tips to make it even easier:

  • Do NOT hit it with your hand. It hurts. Smash it with the bottom of your metal bowl. You might have to hit it twice. Do it in your sink – the garlic cloves will explode EVERYWHERE – at least they’ll all be in your sink (instead of them flying around your kitchen).
  • Only put one head of garlic in the shaker at one time. I tried to do a couple at once to save time…NOT. You need the extra room for the cloves to rattle around to get cleaned off.
  • Stuff will fly everywhere, it will be really LOUD and very satisfying. Shake the dickens out of it. THE DICKENS. He’s serious.
  • If you don’t have these bowls, the cheapest place to get them is a restaurant supply store. I got mine at AceMart in Dallas.

This tip is a GAME CHANGER. Have fun!

Gadget: Veggetti (Vegetable Spiralizer)

This “As Seen on TV” gadget WORKS. I sauteed some cloves of garlic in olive oil and then added the zucchini strands. In a few minutes I had the best non-pasta I’ve ever had. I honestly prefer it to spaghetti. Serve with your favorite sauce. My first attempt at using this is pictured above. This thing is FUN. Now, it’s a cone of knives, so don’t stick your hand in it…and use a fork to twirl the veggies when they get small. It is much easier than the top that comes with it.
